4 PODS OR ⅔ TEASPOON DRIED CARDAMOM
1 OZ PLUM SYRUP
0.5 OZ TAMARIND CONCENTRATE
1 OZ EGG WHITES
1 TSP SUGAR
2 DROPS ANGOSTURA ORANGE BITTERS

INSTRUCTIONS

ADD THE DICED FIG, CARDAMOM, SUGAR INTO A SHAKER AND CRUSH WITH A MORTAR. THEN ADD THE PLUM SYRUP, MEZCAL CAMPANTE, TAMARIND CONCENTRATE, 2 DROPS OF ANGOSTURA ORANGE BITTERS AND EGG WHITES AND STIR. SHAKE WELL. STRAIN OVER ICE INTO AN OLD FASHIONED GLASS OR TRADITIONAL CUP.
